There is a synergism that goes on in whole foods that's beyond the sum of the parts.

For instance spinach... what they find is that when you combine vitamin C and K (which spinach is a very good source) they amplify each other's anti-cancer activity tremendously, maybe a thousand-fold. And so you might think "Well if I took Vitamin C as a pill or Vitamin K as a pill, I'd have to take huge amounts to get the benefits that scientists talk about." But in fact, if you put it in a whole food there is this elegant symphony going on that makes sure that you don't need as much as the pill version of that same substance.

 

This type of synergy happens with all kinds of whole foods.

 

Vitamin C - what we find is that the Vitamin C in a whole orange lowers your risk for heart disease, cancer and other problems much more than if you took a pill of Vitamin C.

 

Nutrition advice does seem to change from time-to-time

 

But what I have found over the course of my thirty years of experience and reading thousands of studies is "Don't bet against Mother Nature." Things have been in foods for millions of years and humans have adapted to that diet over the course of eons. There are things in whole foods that can help protect us.
