Color Of Your Food
Interview
with Dr. David Heber author of the book,What
Color Is Your Diet?
Mike
Carruthers:
You've heard it a million times we need to be eating more
fruits and vegetables.
Dr. David
Heber:
Most Americans eat three servings a day of fruits
and vegetables two of those are french fries and iceberg lettuce
and the third one if ketchup.

Heber director of the UCLA Center for Human Nutrition and author
of the book What
Color Is Your Diet.
Turns
out that man evolved on colorful fruits and vegetables and our
genes which haven't changed in fifty thousand years have been
expecting these colors. Red in tomato, they prevent cancer,
heart disease, the commonest forms of blindness and even Alzheimer
disease progression.Green-yellow is spinach which has lutein
which goes to back of the eye and helps prevent blindness. Red-purple
is strawberries, raspberries, red wine these have very potent
anti-oxidants.
Although
we are naturally drawn to colorful foods for a long time Dr.
Heber says we have been forced to eat other things.
You see
about eight thousand years ago agriculture was developed in
the Middle East. Wheat and grains became the basis of our diet
and was an easy way to avoid famine. If you saw the movie Gladiator
they were throwing loaves of bread to the crowd in Rome. Today
they would be throwing hamburgers and french fries, but you
notice that the bags on the french fries are made in a red color
that's to attract you to eat them.
Because
we are naturally drawn to colorful foods Dr. Heber says adapting
to them is easy if we give them a try.
Our taste
buds change over a period of about six months and you'll really
educate your palate to eat healthier foods and you will not
feel deprived.
