IOutdoor cooking has gotten quite sophisticated and those "in
the know" say if you use a charcoal grill, don't use lighter
fluid.

fluid is out of the question. A good piece of equipment to have
for a charcoal grill is a chimney starter. You know what those
are? Those cylinders that you just put the charcoal in and then
you load some newspaper in the bottom and then you light the
newspaper. And it's a great way to start the charcoal.

Meets Grill and personality on the food network says when
you're cooking a steak it's not a great idea to cut the meat
open to see if it's done. So, what's a better way?
I call it
the trampoline method which is, if you have a steak on the grill
and you press it with your finger if there's a lot of give to
it that means it's pretty rare. And as it gets firmer that means
it's cooked more to the point where if it bounces right back
at you, it's probably closer to medium well or well done. And
so, if there's a lot of give to it it's rare, if it bounces
right back it's more to the well side.
And Bobby
has some quick simple ideas foods you can cook on the grill
that you may not have thought of.
Grilled fruits for dessert is fantastic. I mean things like
pineapples and peaches and nectarines, all those things grill
incredibly well. You know it brings out all of it's natural
sugars from the heat of the grill and they caramelize on the
outside where the grill is actually touching the fruit. I think
it brings out the sweetness and the natural fruit out even more.
